SIBERIAN STURGEON FROM THE OVEN
Siberian sturgeon from a local farm. This is a real dinosaur! Sturgeons are currently the world's oldest living fish species - they have been known from the fossil record since the Late Cretaceous. Together with the paddlefish (Latin Polyodontidae), they are the only currently living representatives of cartilaginous fish. Yes, cartilage - not bones. We prepare it in the simplest way to emphasise its age-old character - straight from the oven, with a browned decorative skin!
